Edir and his son Thales manage their small farm together. Growing three hectares of coffee and producing 125 bags a year. Their drying process is followed to a tee. Here’s how. On a concrete patio, the coffee is placed in thin layers to rest in the sun. 2 days pass. They start moving the beans 10 to 12 times a day.
Halfway through, they make thicker layers and let the coffee rest. They spread the coffee on the patio once more and move the beans until it reaches the ideal humidity level. The lots spend around 20 days in the drying stage. This refined process along with a meticulous attention to detail is what makes for a coffee high in clarity and sweetness.
